Everything in Moderation

Yum! Oatmeal cookies! My favourite! And gluten free! However, when eating sweets, make sure it’s in moderation and don’t over do it.

  1. Here is the recipe for these.

    Gluten Free Oatmeal Cookies

    1 cup of Gluten Free Margarine or Butter
    1 cup of Sugar
    2 Eggs
    1 teaspoon Gluten Free Vanilla
    1 1/2 cups Brown Rice Flour
    1 teaspoon Gluten Free Baking Soda
    1/2 teaspoon Salt
    1/2 teaspoon Cinnamon
    1 1/4 cups Gluten Free Rolled Oats
    2 cups of Gluten Free Chocolate Chips or Carob Chips if desired

    Preheat oven to 375*F.

    1) Cream margarine with sugar.
    2) Beat in eggs and vanilla
    3) In a separate bowl, stir together flour, baking soda, salt, and cinnamon.
    4) Gradually stir into creamed mixture.
    5) Add rolled oats and chocolate chips (if desired).
    6) Drop by tablespoons onto ungreased cookie sheets.
    7) Bake in preheated 375*F over for 10 to 14 minutes depending on how chewy you would like cookies.

    Yield about 4 dozen.

    If you want these to be dairy free, too, use dairy free margarine and dairy free and gluten free chocolate chips (yes, they exist!) or carob chips. Or use raisins or cransins instead of chips.
